Earthquakes are peeled or scrubbed.
Cut them for approx. 3-4 mm thickness.
Turn them with olive oil - like in a freezer, which distributes the oil efficiently.
Lay them on a baking sheet with baking paper so that they do not overlap.

Cut cauliflower into bouquets and boil them tenderly, refrigerate until they are completely cold 2-3 hours.
Make dressing: mix creme fraise, smoked cheese and finely chopped onions. Season with salt and pepper.
