100 | g | Grated parmesan or other "dry" cheese |
150 | g | Haricots verts |
2 | Courgettes in cubes | |

2 | Onion finely chopped | |
2 | Udkernede fresh tomatoes | |
200 | g | Carrots in thick pieces |
250 | g | Fresh white beans |
250 | g | Peeled potatoes into large cubes |
5 | clove | Garlic (you can also take a little more if you are tough!) |
Instructions for Soupe au pistou
To prepare the Soupe au pistou recipe, please follow these instructions:
Pistou: all the ingredients are mixed in either mortar or blender, it depends on how you prefer consistency.
La soupe: Pour 2 litres of water in a large pot and got the white beans in conjunction with thyme sprigs, bring to the boil and let simmer for 20-30 minutes. Foam of the water once in a while. Add the potatoes, leeks, tomatoes, onions, celery, carrots and bring it all to a boil again and add salt and pepper to taste. Let it all Cook again in 20-30 minutes. Add haricots verts, Zucchini and pasta. The soup is boiling now further in 15 minutes and then it is ready. Remember to remove thyme twigs, they scrunch to throat!
You can either choose to touch le pistou soup or to servers in the next with a delicious bread.
