Instructions for Torta della nonna (Grandma's pie)
To prepare the Torta della nonna (Grandma's pie) recipe, please follow these instructions:
Dough:
Butter, sugar, lemon peel and a pinch of salt, stirring softly with your fingers. Half of the flour is stirred. Egg yolks are stirred and finally the rest of the flour. The dough is kneaded evenly and rests cool for ½ hour.
Cream:
Milk and lemon peel cut into strips, bring slowly to boiling point, and take off the fire. Eggs and sugar are whipped together, the flour and then the hot milk is whipped in it. The cream is added, brought to boiling point with constant whipping, and whipped until it is even (about 1 min). 2/3 of the dough is rolled out and a tarted shape is added. Bake at 220 degrees for approx. 10 min. Until it takes color. The rest of the dough is rolled out very thinly. Roll out on a piece of film and place in the freezer for approx. 5 min. This makes it easier to push the lid down into the mold. The cream is spread into the pie and the rest of the dough is laid over and squeezed along the edge, like a lid. Pinnacles are spread over the pie. Bake at 220 degrees until the pie is light golden.
