Instructions for Pomme duchesse
To prepare the Pomme duchesse recipe, please follow these instructions:
Peel the potatoes and cut into smaller pieces. Boil them tenderly, approx. 20 min., Drain the water and steam them dry. Mash the potatoes through a sieve and stir with egg yolks and butter. Season with salt and pepper and fill in a sterile syringe. Spray the pulp on small-scale baking paper, brush with egg yolk and bag for 10 minutes. At 225 degrees until golden brown.
Serving: Can also be sprayed into a ring on a refractory dish (or plate plate) and served with the "steak" in the middle.
