To prepare the Brown potatoes 02 recipe, please follow these instructions:
Cook the potatoes with peel on, let them cool and then pil them. Let them get totally cold.
Put the sugar on the forehead and let it melt completely, without getting dark. Pour the cream and let it melt together (about 5 minutes). Add the potatoes and simmer together for a minimum of 30 minutes.
There must be enough "caramel mass" that most potatoes are covered.
Keep in mind that the sugar does not cling. If it clumps (stiffens) it can be melted by pressing down on the bottom of the pan. Therefore, stir frequently.
Continue until the caramel mass has become thick (can take up to an hour if a very strong taste and thick caramel sauce is desired).
Leave to cool a little before serving as they get very hot.
