2Peeled tomatoes cut into quarters

2Big chopped green peppers
2Strimlede celery stalks
3Large onion, sliced

Instructions for Summer squash stew

To prepare the Summer squash stew recipe, please follow these instructions:

Saute the squash slices on both sides in oil and melted butter until they are soft. Take them up and then saute the onions, bell peppers and celery. Add tomatoes and herbs. Let the vegetables simmer gently for 30 minutes and let simmer with squashen in the last 5 minutes.

Serve with a dusting of grated Parmesan cheese.
