1Small tablespoon. Tamari (soy sauce) or 1 tbsp. herbal salt
1-2tspDijon mustard
1-2tbspAromatic vinegar (white balsamic)
2dlOil like olive oil
2tspMustard
200gMayonnaise
2-3tbspMinced parsley
300gTofu
4tbspLemon juice or cider vinegar

Tofu Mayonnaise:
It all blends in a blender until it becomes a thick cream. Store in a refrigerator.

The tofumayonnaise becomes light brown because of the tamari-use possibly. 1 small spsk herb salt instead, if you want a white mayonnaise (herb salt is available in the health food store and in better supermarkets).
