To prepare the Potage Parmentier recipe, please follow these instructions:
The potatoes are peeled, cut first in a quarter lengthwise, then thinly sliced. Let them pull in cold water until they are used. Clean the pores, cut the root and the green part away. The white part is cut longitudinally and then cut into thin strips.
The butter is melted in a large saucepan and the puffs are slowly sautéed over low heat for approx. 8 min, or until they are completely soft. Add the potato slices together with 1 1/4 l of water. Pour the saucepan and simmer for 30 minutes. Or the potatoes are tender. Foam the surface of impurities. Add the finished soup with salt and freshly ground pepper.
