Instructions for Miroton
To prepare the Miroton recipe, please follow these instructions:
Pommes duchesse:
Peel the potatoes and cut into smaller pieces. Boil them tenderly, approx. 20 min., Drain the water and steam them dry. Mash the potatoes through a sieve and stir with egg yolks and butter. Season with salt and pepper. Fill in a sterile syringe bag. Spray the mass on the edge of a refractory dish.
