Cooked rice (jasminris) or noodles
Oil for frying
1Trimmed pork tenderloin
1bundleSpring onions for about 5 cm long pieces
1Green bell pepper into strips
1-2tspCurry paste (or powder)
2cloveFinely chopped garlic
2dlCoconut milk
2tbspLime or lemon juice
200gFresh spinach (or 100 g frozen entire-leaved)
2-3tbspFish sauce
250gField mushrooms in slices

Cut the tenderloin for approx. ½ cm thin strips. Make all the vegetables ready.

Stir garlic and curry paste in oil approx. 1 min. Add the meat and raise it approx. 5 min (increase it 2 times, otherwise cook instead of roasting). Take the meat with a casing.

Stir spring onions, peppers and mushrooms a few min. Add spinach and continue until it has collapsed. Add coconut milk and lime / lemon juice. Bring the meat back into the wok and taste with fish sauce.
