Ingredients for Kolokythia (Greek Zucchini Balls)
0.125 | tsp | Pepper |
0.5 | Medium onion finely chopped | |
1 | tsp | Oregano |
1 | tsp | Salt |
1 | tbsp | Butter |
2.5 | dl | Crumbled feta |
3 | Eggs | |
3 | Medium zucchini grated | |
3 | tbsp | Soy powder |
Instructions for Kolokythia (Greek Zucchini Balls)
To prepare the Kolokythia (Greek Zucchini Balls) recipe, please follow these instructions:
Mix the grated zucchini with salt in a bowl and leave it for approx. 1 hour. Push the water out.
Add eggs, feta, oregano, onion, pepper and soya powder and mix well.
Spray a thickened saucepan with oil, add a large spoon. Butter and let it melt over medium heat. Step dough 1 tbsp. At a time and turn once. Add more butter as needed between each. Keep the cooked croquettes warm.
The trick is to make them turn brown before turning them, otherwise they tend to fall apart. Should some fall apart, do not throw them out, they still taste amazing

To save some time with the preparations, you can run zucchini and onion on a food processor.
