Pour water so it just reaches the ladder, season with salt and pepper and turn down the heat. Lay the lid on the pan and let the boil slightly boil. 30 minutes.
Take the ladder out of the pan and leave it. Rest for 15-20 minutes before cutting into slices.
Directions: Slices of meat are served with the bean mixture.
Accessories: Could be tomato salad with rucola and spring onion as well as slices of Italian bread dripped with olive oil.
