Ingredients for Hooker stew
1 | stem | Leaf celery |
1 | Carrot | |
1 | Handful of fresh herbs | |
1 | Large onion | |
1-2 | tsp | Coarse salt |
120 | ml | Olive oil |
2 | pcs | Aubergines |
2 | pcs | Courgettes |
2 | clove | Garlic |
2 | Large potatoes | |
600 | g | Peeled tomatoes |
600 | g | Green bell pepper |
Instructions for Hooker stew
To prepare the Hooker stew recipe, please follow these instructions:
Cut the onion in thin slices, and crush the garlic.
Cut the other ingredients in coarse cubes.
A large pot heats up with olive oil.
Saute the vegetables for about 10 minutes.
The peeled tomatoes poured in, and place the lid on.
Let it boil at high heat for about 10 minutes, and then turn down to medium heat for about 1 hour.
About 15 minutes before the Court must be served, add the fresh herbs.
Tips:
The herbs can be parsley, Rosemary, thyme, Basil or oregano. It is chosen after taste. Can be served with different kinds of meat, wholemeal bread, but especially hams or cured ham stands well to the right.
