Ingredients for Croquettes

Eggs
Wheat flour
Pepper
Breadcrumbs
Salt
Small shrimp
2Egg yolks
3dlMilk
50gGrated cheese (gruyere)
75gButter

Instructions for Croquettes

To prepare the Croquettes recipe, please follow these instructions:

Boil milk and butter up, mix the flour at once and stir until it becomes a solid dough. Take the saucepan off the heat and add 2 egg yolks and cheese, possibly salt and pepper. Stir well. Allow the dough to cool completely.

Make small sausages (about 5 cm / 1.5 cm slide), with shrimp in the middle.
Turn the sausages into flour, then into the eggshell, and finally into the rasp.

Put in the freezer on a tray. When frozen, they can be packed in bags.

Freezing dishes without thawing until golden and crispy.

Served with a green salad as starter
