100 | g | Butter |
180 | g | Wheat flour |
300 | g | Dark chocolate 44% |
360 | g | Sugar |
6 | Egg white, pasteurized |
Instructions for Cream puffs
To prepare the Cream puffs recipe, please follow these instructions:
Bottoms: Flour and margarine and break into pieces and mix with the sugar then add if necessary. a little water to get the dough to hang together. Kneaded and rolled out. 25 bases set out with a laying out or glass ca. 7 cm in diameter.
Bottoms baked in 8-10 minutes at 200 degrees C alm. oven on the second Groove.
Fill: the egg whites whipped very stiff. Add the sugar slowly. The stuffing is put on those cold bottoms with an icing bag with stjernetyld.
Heats then 5 minutes at 150 degrees C (this will be the stuffing a little firmer, so it can be overdrawn).
Cover: Couverture chocolate is melted and dabbed on with a bagepensel.
