To prepare the Chopped chicken in tomato coconut recipe, please follow these instructions:
Start the whole process as if you were making a meat sauce.
Heat the oil in a large saucepan while slicing onion and preserving garlic. When the oil is hot, both types of onions must be thrown in. Step for approx. 4-5 min. At almost full heat.
Then the meat is added. Step it all until there is no pink meat. It may be you have to chop a little with the saucepan along the way. Chopped chicken meat often hangs more together than beef.
Then add both coconut milk, concentrated tomato puree and chopped tomatoes. Stir around and add approx. 1 tbsp. Turmeric (taste yourself). Adjust the taste with chilli, salt and pepper.
Allow it to stand and simmer while the pasta or rice boils.
Then serve it on top of rice or pasta.
tips:
Personally, I prefer to eat it for rice. Either Jasminris or Basmati rice. The dish is also nice if you are alone, as you can easily freeze small portions into bags.
