1dlCrème fraiche 38%
1dlWhipped cream
100gShallots
20gButter
400gChanterelles, fresh
7.5dlChicken broth

Instructions for Chanterelle soup

To prepare the Chanterelle soup recipe, please follow these instructions:

'S kantarellerne and share them, if they are large. Kantarellerne should preferably not be put into the water, then sucks the water and gets boring. Brush them clean under cold running water.

Arrow and chop the onions. Sauté onion and chanterelles in a few minutes in a pan of butter by even heat.

Pour the broth and let the soup Cook low for 10 minutes.

Pour the cream in.

Stir in sour cream, egg yolk and cornstarch together and stick it in the soup. Heat it to just before boiling, and season with salt and pepper.
