Rinse the potatoes, let them boil covered in salted water. Pour the water off and allow to cool off (preferably overnight). Then they must be peeled and cut into thin slices.
Take a forehead (not fake but a forehead of cast iron, iron or steel). Heat half of the fat up. Distribute the potato slices in it - it is best if there is room for them all. Let them boil on medium heat for 10 minutes without touching them. Season with salt and pepper, turn all the slices and bristle them in the rest of the fat for 5-8 minutes.
