To prepare the Zebraculotte like cold carpaccio recipe, please follow these instructions:
Fold the zebra culottas, which have previously sprinkled with salt and pepper, into sliced bacon and place in a frying pan or refractory dish.
Smash into the oven, preheated to 275 degrees (no typing error: 275 degrees).
When the bacon has got the "right" color and has become crisp, the temperature is turned down to 120 degrees, and the zebra continues for approx. 30 minutes after which it is cooled - NOT in foil just covered with a dish.
Once the zebra has completely cooled, cut into leaf-thin slices.
tips:
Can be served on a lunch plate with a salad salad and a raspberry / chili potato or strong mango chutney.
