2Anchovies/legless herring/sardeller

20gButter to sauce

Instructions for Wienerschnitzel with classic accessories

To prepare the Wienerschnitzel with classic accessories recipe, please follow these instructions:

Peel the potatoes and cook them 15 min. Until they are almost tender. Let them cool off. (Possibly with cold water).


While the potatoes boil, the "boy" is made. Cut a lemon slice, cut capers, planed horseradish and finally two anchovies.

Beat the meat with a meat hammer. (It makes the meat more tender and ensures that it is equally thick everywhere). Pan the meat, first in flour, egg, finally rasp.

Cut the potatoes into suitable pieces (possibly quarters). Stir them in a little butter on a hot forehead approx. 5 min. Until they get a nice golden color.

Heat a pan well with butter, wait until it has crashed and flatter the meat 3-4 min each side depending on the thickness. Season with salt and pepper.

Bring a new stick of butter on the same pan and soda. This makes up the butter sauce.

Finally, the peas are blanched (boil) for 2-3 min in salted water.

tips:
The "boy" (lemon slice) is served on the meat, but can of course be omitted.
