Instructions for Vitello tonnato (II)
To prepare the Vitello tonnato (II) recipe, please follow these instructions:
Boil lårtungen in water with peppercorns, Bay leaves and salt approx. 50 min. cool down and save a little veal meat soup to tunsaucen.
In a blender be complied with tuna, anchovies, capers, onion, eggs, mustard, blend and add the oil slowly, eventually calves the soup is added so that it neither becomes too thick or thin. Pipe a ½ bunch chopped parsley into the sauce and pour it over the tyndtskårne slices of lårtungen. Garnish with tufts of parsley and lemon.
Server with sun-ripened tomatoes and black olives.
