2dlDry white wine
4Ostrich steaks
500gMushroom (or other fungi)

To prepare the Strudsesteaks with mushrooms recipe, please follow these instructions:

The barley roasted in butter on the forehead ca. 2 min. on every side. During the frying season they are seasoned with salt and pepper. They are taken from the forehead and packed into the stanniol.

Meanwhile, spoon the mushrooms in a little of the butter on the forehead, season herbs and cook for a couple of minutes.

Then the pan is boiled off with white wine. The rest of the butter, creme fraiche and dijonsennep are added and boiled into a creamy sauce.

Served with seasonal potato.
