In a flat-bottomed pot, chopped onions are sautéed in butter. They must not turn brown. Add mushroom and lemon juice. Stir well. Sprinkle with peppers, curry, salt and pepper. Let it simmer for 5 minutes. On a frying pan, the ostrich smoked in butter. Sprinkle with flour and water. The meat must not be passed. Get it up in the vegetable grinder. Stir white wine with tomato paste and pour it over. Mix it well. Heat through and cook with whipped cream or cream fraiche.
Served with mashed potatoes.
