15gYeast
2.5dlButtermilk
450gSifted spelt flour
50gFinely chopped Walnut kernels

The yeast is crumbled in the bowl. Mix buttermilk and water. Pour it over the yeast and stir it smoothly. Add nuts, oil, salt and most of the flour. Eat the dough thoroughly and long. Add more flour until the dough just drops the bowl but still is quite soft. Let the dough raise in the bowl covered and stick to double size approx. 2 hours. Slice the dough easily and divide it into 3 equal pieces. Form them into flutes with flour-sprinkled hands and put them on a plate of baking paper.
