Instructions for Sorbet with lime and banana
To prepare the Sorbet with lime and banana recipe, please follow these instructions:
Peel the two bananas, cut each of them into three pieces. Cut the middle pieces into thin slices - use approx. 50 slices - and place them on a baking sheet. Bake them in preheated oven at 100 ~ C for 45 minutes until they are caramelized.
Blend the ends of a purée into the food processor. Carefully cut the green peel of the limes. Squeeze the juice out of them. Pour 21/2 dl of water into a saucepan, add sugar, honey and glucose. Bring it to the boil. Let it get cold and stir banana puree, finely chopped gingerbread and juice. Freeze this mixture in an ice machine put it in the freezer.
In the last minute, elongated buns are formed using two hot spoons. Put them in cold, deep plates and yarns with the dried banana leaves.
