Whip the eggs well together (egg white and plum). Add water or cream. Melt the butter on a pan or in a pot with a firm bottom. Pour the egg yolks and let it stiff at low heat. When the mass is more easily stiff, scratch carefully. Eggs should never be turned completely. Remove from heat before it is completely stiffened.
Serve the scrambled eggs with slices of smoked salmon and decorate with cress, dill or chives.
