Chop the salmon nicely so that it still retains a little texture and without it becoming mash. Divide the chillipepper and carefully remove the kernels. Cut it very nicely. Peel the apples and cut them into small cubes. Cut the coriander well. Stir the salmon with egg yolks, chilipeber, 2/3 of the apples and coriander. Season with salt and pepper. Stir a marinade of 1 part of soy and 3 parts olive oil and turn the rest of the apples into.
