Instructions for Rosehip parfait
To prepare the Rosehip parfait recipe, please follow these instructions:
Came the cleaned, flushed rose hips in a saucepan with water, lemon juice, honey, sugar and the split vanilla pod. Simmer about 20 minutes, until the fruit is quite tender. Roof vanillestangen up and blend the rest to a thick puree.
Pour it back into the Pan and whisk the egg yolks in. Whisk over low heat until custard becomes thick. Pour it into a bowl and leave to cool. Whip the cream to foam and turn it into the cooled rosehip cream. Fill in a form, which is made in the freezer 3-4 hours.
Turn the ice out of the mold and serve it with blackberries turned into a heavy syrup (1 cup sugar and 1 ½ water. cooked through).
