Instructions for Roll sausage

To prepare the Roll sausage recipe, please follow these instructions:

Pig knocks or collar is cut into a square. Wide it out on the table with the inside facing up and sprinkle with salt, pepper and allspice. So met 8 leaves isinglass in, and it rolled tightly and tied up with string. Distance between the laps around 1 cm. Sausage placed in brine for 24 hours.

So put it in cold water together with Laurel, whole pepper, thyme, star anise, a little salt and 4 cloves. Boil for approx. 90 min., then met the press form and made in a refrigerator for a minimum of four hours.
