Stir salt and pepper together and mix the mixture onto a clean cutting board. Roll the tenderloin around so pepper and salt settle all the way around. Heat a little oil on a pan and brown the meat on all sides. Place the meat on a grid in a hot oven, 200 degrees 20 minutes. Take it out and let it rest for 10 minutes.
Cut the radishes and mix the rucola with iceberg and decorate it on a large dish. Cut the meat into thin slices and decorate it beautifully over the salad. Sprinkle with ginger and fresh chilli. Sprinkle with the radishes.
Whip the dressing together and put it over with picked coriander and server with a good bread.
