Let the pineapple pieces dripping off.
Peel the celery, cut it into slices and boil the tenderloin in leachate water, approx. 8-10 minutes. Pour it into a layer of dirt and let it drip. Once cooled, it is cut into small dice or thin bars.
Season the cream with spices and gently mix the pineapple and celery. Pour the salad into a serving bowl and decorate with half walnuts.
