To prepare the Pesche ripiene (fresh peaches filled with macrons) recipe, please follow these instructions:
Preheat the oven to 175 degrees.
Peel the peaches, 2 at a time in boiling water for approx. 20 seconds, pick them up with a casing, put them in cold water and gently peel off the skin with a sharp knife. The peaches are divided in half, the stone is removed, and with a tablespoon they cough each half to make room for the filling in the middle. Add the peeled peach to the crushed macros, pour sugar, butter and egg yolks into the filling, stir together and pour the filling into each peach.
Put half the peaches side by side in a greased ovenproof dish and bag them for 20-25 minutes or until they are just tender. Sprinkle the peaches with the syrup that runs out during baking.
Can be served hot or cold.
