To prepare the Pears in Daim recipe, please follow these instructions:
Boil the pickle: cut the peel of the lemon with fx. a potato peeler. Bring water, sugar, ginger and lemon zest to a boil. Cook on a low heat and brine, covered, for about 5 minutes. Halve the pears and remove stem, flower and cored. Cook the pears in the brine for about 5 minutes. Style them to cool-still in the bed sheet.
Cream: Whip cream and Daim for a lightweight foam and season with ginger and pickle.
Advantage the cream on 4 serving plates. Take the bulbs out of the brine, Pat dry and cut them into thin slats, as a fan. Serve the pears on cream and garnish with Daim.
