Instructions for Niels-emil's cranberry bread
To prepare the Niels-emil's cranberry bread recipe, please follow these instructions:
Mix lukewarm water, crushed wheat, crushed rye, salt, bowl, blackcurrant jam, raisins, flaxseed and wheat bran in a bowl. Cover with a cloth and let it stand overnight. Mix the dried yeast with wheat flour. Heat the water to 50 degrees and pour it while stirring in the flour mixture. Add the dough from the first day and mix well. You do not have to knead the dough. Form 3 narrow lengths of dough, place them on baking paper on a plate and let them rise in the oven at 50 degrees for about 15 minutes. Bake bread at 225 degrees for approx. 30 minutes and let them cool on a shake without cover.
tips:
1 pack of dried yeast corresponds to 1 pack of fresh yeast. Tørgær requires liquid with higher heat, approx. 50 degrees. You can not use dry yeast in cold batter.
