Ingredients for Marrow sauce
0.5 | tbsp | Chopped onions |
0.5 | tsp | Thyme |
1 | Serving Brown basic gravy | |
1 | tsp | Tomatpurè |
10 | White peppercorns – roughly painted | |
100 | g | Beef marrow |
15 | g | Butter, margarine or rendered fat from the flesh |
2 | dl | Red wine |
Instructions for Marrow sauce
To prepare the Marrow sauce recipe, please follow these instructions:
Sauté the onions in the fat and add wine, peppercorns and thyme. Boil the mixture into about 20 min. to ca. 1/3. SI it is in because the gravy and season with tomatpurè. Let the gravy boil well through some minutes and season again. Add the beef marrow into small cubes. Set in a water bath and stir in the gravy, but not allow it to boil.
