0.5tspThyme
1Serving Brown basic gravy
1tspTomatpurè
10White peppercorns – roughly painted
100gBeef marrow
15gButter, margarine or rendered fat from the flesh
2dlRed wine

Instructions for Marrow sauce

To prepare the Marrow sauce recipe, please follow these instructions:

Sauté the onions in the fat and add wine, peppercorns and thyme. Boil the mixture into about 20 min. to ca. 1/3. SI it is in because the gravy and season with tomatpurè. Let the gravy boil well through some minutes and season again. Add the beef marrow into small cubes. Set in a water bath and stir in the gravy, but not allow it to boil.
