Instructions for Jurjaniya
To prepare the Jurjaniya recipe, please follow these instructions:
Cut the meat into suitable pieces and put it in the pot, including water and salt. Cut some onions into small pieces. When the water boils, pour the onions together with dry coriander, pepper, ginger and finely ground cinnamon. If desired, walnuts can also be added, which are chopped in suitable pieces. Stir around until the ingredients are cooked.
Then take the seeds from a sour pomegranate and from black grapes, grind them well, let it pull in water, squeeze it through a fine sieve and put it in the pan with a little vinegar. Add sweet almonds, which are scalded, chopped finely and drained into water. When the food boils and is almost finished, add sugar as desired.
Sprinkle a handful of raisins on and sprinkle with rose water.
