Instructions for Greek earthquakes
To prepare the Greek earthquakes recipe, please follow these instructions:
The earthquakes are scrubbed clean, but they should not be peeled. They are put in boiling water and cooked just a little, approx. 10 minutes. Keep an eye on the tubers while boiling as they easily boil.
The earthquakes are cut lengthwise and laid with the round side upwards in a low greased oven-proof dish.
The onions are cut into slices and golden in a little oil together with crushed garlic and thyme. The mushrooms are sliced and added. The vegetables simmer 5 minutes.
Onions and mushrooms are spread over the earthquakes. The black olives are put in the dish. The feta cheese crumbles over.
The dish is put in a 200 degree C. C. alm. Oven for approx. 15 minutes.
Loaf of fried roast or barley can be served to the earthquakes, and celery red cabbage salad.
