The plaice fillets are rinsed and cut through lengthwise. Put in a dish where lemon juice and urine salt are poured over. The fillets must be drawn for at least 10 minutes. Mushrooms and peppers are cleansed and the peppers are cut into squares of approx. 2 x 2 cm. If using wood spears, they must draw water before use. Each fish fillet is laid twice and sliced on grilled sprouts alternately with whole mushrooms and the different colored peppers.
