(lemon) thyme
Coped with butter and/or olive oil for frying
Pepper
Juice of 1 lime and 1/2 dl water
Salt
0.5dlPeanut oil
1tbspLemon thyme leaves
1tbsp(skalotte) chopped onion
1tbspWhite balsamic vinegar
1tbspClarified butter
1tbspHeather honey
2Handfuls mixed fungi such as chanterelles and karljohan
2Parsnips (or parsnips and parsley root)
3-4Carrots
4Young pigeons
6Shallots like oblong

To prepare the Duck breast with honey marinated root vegetables and mushrooms recipe, please follow these instructions:

Cut the breast meat from the pigeons, close to the leg.

Add the onions to the marinade, add the remaining ingredients and cook for a couple of minutes. Cut the greened vegetables into small bites and season them in clear butter, approx. 10 minutes. Pour the marinade on, cook on for a second and let the vegetables pull for serving. They do not have to be in the fridge, just leave them on the kitchen table for 15-30 minutes.

Prepare the mushrooms, brush them clean with a brush, cut the bottom of the stick and split the sponges in half or quarters. Shake them with good heat and constantly stir in slightly clarified butter.

Season the dumplings with salt, pepper and thyme, and step them 4-5 minutes on each side. Let the meat rest for at least 10 minutes before serving.
