Instructions for Broccoli soup I

To prepare the Broccoli soup I recipe, please follow these instructions:

Rinse the broccoli carefully. Divide it into small bouquets and toss the hard stems. Chop garlic, parsley and bacon.

Pour olive oil into a saucepan, add broccoli, garlic, parsley and bacon and stir with stirring for 1 to 2 minutes. Pour the tomato puree and 5 dl water at. Stir well in the saucepan, lay on and cook for 5 minutes.

Then pour the rest of the water in and allow the soup to boil for half an hour with medium heat. Bring salt and pepper and simmer for a few minutes. Just before serving, the soup is leveled with an electric blender.

Can be served warm with a sprinkle of parmesan over.

If you prefer the soup cold, replace the parmesan with a spicy crème fraîche.
