Instructions for Boston steps fried like wild
To prepare the Boston steps fried like wild recipe, please follow these instructions:
Order at your butcher a Boston step of approx. 1.5 kg.
Rub the steps with crushed juniper and brown it in a large frying pan. Take the steps and bag a thin Bechamel sauce in the steaming grease from the steps. Adjust the color and taste the sauce with broth, salt, pepper.
Put the steps back into the pan and let it boil in the sauce until it is tender. A total of approx. 1½ hours.
Lay the steps on a dish, covered (to hold on the heat) Taste the sauce with 2 tablespoons of port wine (one for you and one for the sauce) and adjust the consistency with Maizena, if necessary.
1) Can be served with Hasselbach potatoes, Waldorff salad, and a powerful red wine.
2) Or with new danish potatoes, cranberries, and homemade cucumber salad, and a powerful red wine.
