1tbspNAMA shoyu (soy sauce)
1tbspRaw apple cider vinegar
3tbspApricot oil (or other mild oil)

Mix all ingredients in a food processor or blender. It gives a 1 cup and it keeps itself in a few weeks in the refrigerator.

Tips:
Variations – try to add any of the following: 1 tablespoon chopped onion 1-2 cloves garlic 1 teaspoon fresh ginger ½ teaspoon orange peel or lemon peel a little freshly ground pepper Or, try to replace vinegar with lemon or orange juice. If you are using a dark miso, you can add a date.
