Ingredients for Baked cod with curry sauce and fresh asparagus

½tspCurry
1dlApple juice
1bundleGreen asparagus
1dlWhite wine
1pcsOnion
1pcsMadæble
150gBacon, diced
2dlChicken stock (possibly 2 dl water and 1/2 bouillon cubes)
800gCod fillet with skin

Instructions for Baked cod with curry sauce and fresh asparagus

To prepare the Baked cod with curry sauce and fresh asparagus recipe, please follow these instructions:

Cod:
The fillets are rinsed and dipped dry. Place the fish in a greased dish with the skin side up, sprinkle some oil over and put the dish in the oven at 200 degrees C. alm. Oven for 8-10 min. Then the skin can be easily removed and the cod is seasoned with salt and pepper. Cook the bacon and sprinkle them over the cod.

Curry Sauce:
Shake 1/2 teaspoon of curry into a pan, add onion and apple cut into fine tern and little oil. Sauté it for approx. 2 min. Add 1 dl white wine and let it get a boil. Then add 1 dl apple juice and 2 dl. Chicken dish and let it boil halfway. The sauce is blended and seasoned with salt and pepper.

Asparagus:
Cut the asparagus (or cut the bottom away about 5-7 cm.). Rinse and boil in leachate water for approx. 3-5 min depending on size.

Serve the dish with potatoes or pasta.
