Instructions for Alloyed sauce

To prepare the Alloyed sauce recipe, please follow these instructions:

Gently melt the fat into a saucepan and stir the flour. Beat the mixture smoothly and add the liquid slightly at a time, whip in the meantime. Let the sauce boil approx. 3 minutes. Stir the pasteurized egg yolk together with a little of the hot sauce. Turn off the hob and stir the egg mixture into the sauce, do not boil - then it separates. Taste the sauce with salt and pepper and serve immediately.
