1500gOstrich culotte

3tbspWheat flour

Instructions for African ostrich stage

To prepare the African ostrich stage recipe, please follow these instructions:

Mix all the ingredients for marinade. Place the meat in a dish of appropriate size and cover with marinade. Cover the dish close to and place in the fridge for 2-3 days.

Take the meat off the marinade and say the rest of the marinade, remove the bay leaves. Heat the oil in a cast iron pan and brown the marinated meat at high temperature. Season with salt and pepper. Take the meat and shake the smoked bacon in the pan. Add that stored from marinade and add after 5 min. 2/3 of the liquid marinade as well as water. Put the meat in the pan again and let it boil easily for approx. 1 hour.

Lift the meat and smooth the flour with flour while adding the broth. Season with salt, pepper, peppers and a sweet red wine. Let it boil lightly for 5 minutes. more.

Cut the meat into slices and before serving, put it back into the sauce for heating.

Served with noodles, flutes and mixed salad.
