Sugar and water boil and refrigerate. The cleaned berries blend with the layer and the whole is flavored with lemon juice and finely minced mint. Pour the sorbet into an ice machine or a stainless steel container and place it in the freezer. If you are freezing it in a normal bowl, stir well around approx. Every half hour. Save excess berries and dip them into melted chocolate. Arrange the sorbet with chocolate berries and server with ice-cold champagne or a good dessert wine.
