To prepare the Souffle aux pommes du terre recipe, please follow these instructions:
Peel and cut the potatoes into smaller pieces. Boil them until tender – steam them afterwards. Mash the potatoes, stir in butter, whipping cream and milk in the egg yolks whipped. in one at a time. Whip it all through and season with salt, pepper and Mace.
The egg whites whipped stiff and turned over in kartoffelmosen. Pour in buttered portion molds.
Bake in the middle of the oven at 225 degrees for about 25 mins.
