Instructions for Sima
To prepare the Sima recipe, please follow these instructions:
Peel the lemons with a potato peeler. Remove the white layer and cut the lemons into slices. Put lemon slices and sugar in a large bowl. Boil the water and pour it into the bowl over the other ingredients. Let the mixture cool until it is lukewarm and add fermented. Allow to stand overnight at room temperature. Pour through a sieve the liquid in bottles. Tilæt some raisins and a teaspoon of sugar in each bottle and close them. Let the bottles stand at room temperature for a few hours and then they must be stored in a cool place. After about a week, is sima finished to drink.
