1bundleSpring onions
2tspDijon mustard
200gBaby spinach
3tbspOlive oil
800gNew potatoes

To prepare the Potato salad with spinach and dijon dressing recipe, please follow these instructions:

Scrape new potatoes and boil them in salted water until they are tender. Refrigerate them. leave very small potatoes remain whole and cut the largest in bite-sized pieces.

Rinse and drainage the spinach well and gently squeeze excess water from with your hands.

Cut the spring onions into thin slices.

Shake the dressing together in a jam jars.

Mix the potatoes with spinach and spring onions, and gently turn the dressing in. Season with salt and white pepper. Taste the salad just before serving, the potatoes sucks much salt when standing up and pulling.

Tips:
It is too early in the spring for new potatoes, can be easily used another good solid for this potato salad.
