To prepare the Pico de gallo (raw food) recipe, please follow these instructions:

Pull the skin off the tomatoes and remove the kernels. Cut the meat into 1 cm pieces. Lay the tomatoes between several layers of kitchen roll, fold them well and emphasize them, for example a plate with something heavier on. Also chop the peel and pepper in 1 cm.

Squeeze the last remaining juice from the tomatoes and mix the 3 chopped ingredients into a bowl. Press the lime juice over them. Add the finely chopped garlic and leaf celery. Mix everything, cover it and let them marinate a few hours before serving.
